Anyone like Mangos besides me???
I eat myself silly on these things everytime I come to Mexico.
Which do you like best the red ones or the yellow/orange ones???

The soft, sweet, drip down your chin kind!! :D :D :D
In Colombia the kids used to eat the green ones salted too.

I've always loved Mangos. Loved them down in Mexico on a stick. I still get them from time to tiem when they look good and are on sale. Almost got some today but they looked pretty sad.

Sunday they were 3 for a $$$$ the nice sweet yellow/orange kind.
I'm up now wanting to go another one, uuuggghh I maybe can fight off the urge.
Maybe I'll be weak and peel one of my last two.

While we're talking "food for the gods" - a dead ripe papaya - OH MY - cut it up and drizzle lemon juice on it. Makes me drool thinking about it. It used to be impossible to find them anywhere much north of Miami but now Sam's club carries them. Be sure to buy them when they are yellow and soft. They don't ripen well if you get them green. Not like mangos which will ripen just fine if you buy them green.
Oh - there is also a great green mango chutney you can make. I think it has cilantro and onions in it as well as probably lemon juice or something like that.

We just got back from a week at the beach, and my favorite part of the trip (at least what I am thinking about right now ;-) ) was eating crabcakes with mango salsa. I love good crabcakes, but adding mango salsa takes it to a completely higher level. Anybody got a good crabcake or mango salsa recipe?

I'm pigging out on Mangos, Papayas and Avocados.
There's only 2 foods I don't care much for, yet when I find them on the buffet or someone else's table I eat some to remind myself that I still don't care for them --stewed tomatoes---boiled okra, I really could make it just fine if these 2 items disappeared from the food chain.
Every other food I like just fine, no matter how unusual.
You may not believe it, but I have the proof right around my waist line !!!!

I've got something better and cheaper. If I want it to be spectacular I buy fresh Gulf shrimp. Otherwise I buy the frozen imported stuff. I've made this one several times. Never misses.
Shrimp cakes:
3/4 teaspoon curry powder
1 cup panko (Japanese breadcrumbs)
2 tablespoons flaked sweetened coconut
2 tablespoons finely chopped fresh cilantro
2 tablespoons minced red bell pepper
2 tablespoons minced green onions
1 tablespoon minced peeled fresh ginger
3 tablespoons light coconut milk
2 teaspoons minced seeded serrano chile
1 teaspoon low-sodium soy sauce
1/4 teaspoon salt
12 ounces medium shrimp, peeled, deveined, and chopped
1 large egg
1 garlic clove, minced
Cooking spray
Sauce:
1 cup diced peeled papaya
1/4 cup water
1/4 cup fresh lime juice
2 teaspoons sugar
Remaining ingredients:
4 cups gourmet salad greens
2 teaspoons sesame seeds, toasted
Preparation
To prepare shrimp cakes, heat a large nonstick skillet over medium heat. Add curry powder; cook 30 seconds or until lightly toasted and fragrant, stirring constantly. Combine curry powder and next 13 ingredients (curry powder through garlic), stirring well. Cover and chill 1 hour. Divide shrimp mixture into 8 equal portions; shape each portion into a 1/2-inch-thick patty. Heat pan over medium-high heat. Coat pan with cooking spray. Add shrimp cakes to pan, and cook 4 minutes on each side or until browned. Remove pan from heat; cover and let stand 5 minutes.
To prepare sauce, combine papaya and next 3 ingredients (papaya through sugar) in a food processor; process until smooth.
Place 1 cup greens on each of 4 plates. Top each serving with 2 shrimp cakes; spoon about 1/4 cup sauce over each serving, and sprinkle with 1/2 teaspoon sesame seeds. Serve immediately.

YUMMMM
Now I suspect that anyone who doesn't like papaya has NOT had one fresh off the tree with fresh lemon juice drizzled on it. the ONLY decent ones we've gotten in the US have been at SAm's club. The rest have been inedible. :puke :puke :puke
